Experimental conditions:
- Temperature: 25℃.
- Pea protein powder: Water = 1 : 10.
- After stirring pea protein solution evenly and standing for 5 minutes, A layer lightly, and nothing changed with B.
- After 30 minutes, A is stratified deeper, B stay the original status.
- After standing for 60 minutes, A is clearly stratified, solu-tion keeps uniform and stable without separation.
- After placing a period of time, A is completely stratified, while B shows strong stability. And the foam thickness of A is much higher than B, which causing the poor taste.
Experiment conclusion:
We compared H80 (B) with A by placing both solution at different times. It shows B protein pow-der is fully combined with water and dispersed in water evenly. And the water layer represents the water-soluble protein, water-solubility of B is much better than A. With extension of time, B show excellent stability.
